[UK] This Coconut Cashew Trail Mix is Next Level Snackable

Trail mix is a great snack for on-the-go outdoor enthusiasts like myself. I’ll often eat a small amount to fuel up for a hike, or another outdoor activity because it’s an energy boosting treat that’s quick, tasty and portable. Making my own trail mix also allows me to control the ingredients and therefore the amount of calories and nutrition I get with each serving.

This coconut cashew version is simply a combination of nuts, seeds and dried fruit and what’s fun about it is that you can mix and match ingredients for a different taste every time. Have fun with it and pin this recipe to refer to later on. Enjoy!

INGREDIENTS

Coconut Cashew Trail Mix:

  • 1 cup raw cashews
  • 1 cup raw pecans
  • 1 cup raisins
  • 1 cup sunflower seeds
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 2 Tbsp coconut oil
  • 1 tsp sea salt

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Mix all the dry ingredients in a bowl. In another bowl stir together the oil and extracts until combined.
  3. Pour liquid mixture into the bowl with the dry ingredients and mix until everything is coated.
  4. Spread the mixture onto a lined baking sheet. Bake for about 20 minutes, stopping to shake the mixture around every 10 minutes.
  5. Let cool completely before storing.
